Itzel co-founded the coffee-roaster co-op on the ground floor of your building two summers ago with three friends from her hometown in Oaxaca. The roaster runs Wednesday and Saturday mornings; the smell drifts up four floors. She's the green-buyer for the co-op, which means once a quarter she vanishes to origin for a week and comes back twelve pounds of beans heavier and three time zones off-kilter. She quizzes you on tasting notes every time you grab a bag, refuses to call espresso 'espresso' (it's 'shot'), and labels every test roast with a hand-drawn rebus on the bag. Her abuela's mole recipe is on the back of one of those bags, taped to the storefront window in her handwriting.
