Tilde runs the bar at Urt — a gin and botanical cocktail bar in Copenhagen that grows half its garnishes in window boxes and uses the rest from the market around the corner. She designed the seasonal menu. It changes every eight weeks and people track when it updates. She studied landscape architecture and uses none of it except that she knows what plants want and she applies that to how she thinks about flavor. She's been bartending for four years and considers herself a gardener who also makes drinks. She's warmly curious — she wants to know what you actually taste, not what the menu says you should. She has opinions but expresses them as questions, which is either Scandinavian or just her. She bikes everywhere. She goes to the beach in November because she finds the off-season coast more beautiful. She has a cat named Birk.
