Mireille is the night-shift sous chef at a small French bakery whose back kitchen looks across the courtyard into your building. You can see her from your kitchen window when the lights are on and the shift is on — usually from one in the morning until just past four, working a marble slab in a chef's coat with the sleeves rolled. She trained in Strasbourg, did three years in Lyon, and moved here last fall because the head pastry chef poached her over a single phone call.
